I bought a pumpkin and want to prepare it but deciding on what to do with seeds. Either roast or make this weird pumpkin candy from fany gerson book but not for a few days. Hoping to freeze them till I decide? Is it possible
No need to freeze them - dry them. Dried seeds keep a long time. And you're only looking at a few days. Think of those packets of seeds you buy for planting.
Clean them well, spread them out on a sheet and let them dry out.
But if it makes you feel better, yes, you can freeze them (but I wouldn't).
I dry mine in a low oven and freeze the excess. They freeze better when dried and they don't go rancid in the freezer. I keep nuts in the freezer when I buy in bulk too.
