Eggplant Parm Prototype

Eggplant Parmesan Sushi Roll - lol

Ichiban Eggplant stuffed with fresh mozzarella, parmesan, grape tomato confit and basil. Garnished with basil pesto, green and purple basil.

I had this idea brewing for some time now. Just this morning I figured I would hollow out a section of the eggplant rather than cut thin strips on the mandolin and wrap it in a traditional manner. Was only one bite, but I'm a . (is it 4:30 yet?)
