I was just handed a couple of gallons of half and half. The freezers are full so I can't make ice cream. I have a huge batch of baked custard in the oven and am planning to use some of the half and half for pumpkin pies. Still have tons left. Is there any reason I can't make farmer's cheese with half and half instead of whole milk?
 
Half and half has almost three times the amount of fat as whole milk. I can't help but think that's going to affect the outcome, although I don't have enough experience with cheese making to predict how :)

Oh, I would be drinking lots of coffee...seeing as I have never made cheese, I'm not sure if you can make it with 1/2&1/2 or not.
