Fresh peas?

Is it ok to eat fresh peas that have sprouted?

Perfectly fine. The sprouted part can sometimes get a little fibrous if they get too long, but ' pea sprouts' are fine, great tin salads too.

Once in a while, I actually pay for pea sprouts, to put them in a salad. They tend to be quite a bit longer than the one's in your picture, MsM.

Perfectly ok. You eat beansprouts? They´re just mung bean sprouts.
My wife came home from a trip to her cousins last year and started sprouting lentils, to eat in salads. I´d never tried them and am now an addict.
In Indian cuisine, sprouted lentils or "dhal" are often used for cooked dishes - and very tasty they are too!
