Why doesn't cornstarch eventually go rancid like flour does?

I have know clue but I have found boxes of unopened cornstarch in the back of the pantry and they are good. I never throw old cornstarch away. It now comes in a plastic container. But I had two still in boxes. I used them up making lemon meringue pies and stir fry gravy.

Just shooting in the wind here, but maybe it has something to do with the germ? Maybe the process used to make cornstarch eliminates the germ and any oils in the corn kernel, while those items remain in flour and can then go rancid.

OK, that's all the thinking I can do tonight. My brain is starting to hurt and I have to be up in 6 1/2 hours. SIX AND A HALF hours???

I've been trying to get my family to understand that.

Personally I think those labels are there to scare people into throwing good food away and wasting money. The company is in business to make money.
