ISO help with variation on chicken/rice/veggies

One of my favorite recipes is: diced chicken breast in some broth with rice, carrots, celery, and onion and a little thyme. We cook it in an electric skillet (except for the rice, which goes in the rice cooker). We usually throw on a few oyster crackers when serving. It's simple and it always comes out comforting.

I'd like to try some small-ish changes or additions. Any recommendations?
