Anyone ever use lactic acid for any recipes?
Lactic acid won't add elasticity. Items that can help include collagen (it's what gelatin is made of), pectin, and egg white. Marshmallows are a combination of beaten egg white, and powdered sugar.
I used to make a treat for my children, when they were young, called Knox Blocks. They were a somewhat rubbery finger gelatin. It was just Jell-O brand gelatin with a packet of Knox Unflavored Gelatin added. iI didn't melt at room temp, and could be easily eaten with fingers.
