I know there aren't many candy makers on here but I am still experimenting with gummy candy and getting the right texture and instead of using sugar alcohol like sorbitol I thought this might have a similar affect.
 
Rather than Sorbitol, Xylitol is actually good for the digestive tract. It is found naturally in foods, and made by our own bodies. It has a cooling sensation on the tongue, which is pleasant, and kills plaque bacteria, aiding in oral hygiene. Erythritol is even easier to digest, but though it doesn't spke blood sugar, it doesn't have the health benefits if Xylitol.

I saw Lactic acid on commercial gummy ingredients. I have citric acid also if I want to add sour. But I mostly want to add elasticity to the gummies. Otherwise they are like leather.
 
Lactic acid won't add elasticity. Items that can help include collagen (it's what gelatin is made of), pectin, and egg white. Marshmallows are a combination of beaten egg white, and powdered sugar.

I used to make a treat for my children, when they were young, called Knox Blocks. They were a somewhat rubbery finger gelatin. It was just Jell-O brand gelatin with a packet of Knox Unflavored Gelatin added. iI didn't melt at room temp, and could be easily eaten with fingers.

I have pectin too. I will give that a go next batch. I have found however that decreasing the amount of knox gelatin makes it less leathery and more sticky, but too little makes it fall apart in mold.
