Low calorie frosting...

my friends birthday is tomorrow and im going to make her these vanilla cupcakes that have zucchini in them instead of butter and like the book says i was going to make vanilla frosting made from mostly egg whites.. in the trial run two days ago i mixed them for at least an hour but they never got 'stiff little peaks' and wound up going down the sink im sad to say. so does anyone have any ideas???
 
You were basically making a meringue. It's best made in a metal bowl, ideally copper. If any oil gets into teh egg whites, say a bit of yolk, the meringue won't work.

Also, do a quick google search for stabilized whipped cream. It makes a great lower calorie frosting that is delicious.
