Greetings All! I am looking for simple, microwave recipes for Cookies!
Our oven doesn't work and we can't afford to fix it or get another one, and I figured that surely there are some microwave recipes for cakes and cookies that I can handle. I'm far from being an expert. [/img]

Ingredients

8 graham cracker cookies
2 milk chocolate bars (halved)
4 marshmallows

Method

Set power on high. For each cookie, arrange 1 graham cracker in center of paper napkin or paper towel; top with chocolate and marshmallow. Cover with graham cracker and wrap in napkin. Arrange on glass oven tray and heat 3/4 to 1 minute. Let stand 2 minutes before unwrapping.

Yield: 4 cookies
 
No-Bake Cookies
Yield: 36 Servings

Ingredients

1/2 c butter or margarine
1/4 c unsweetened cocoa
2 c sugar
1/2 c milk
1/2 c peanut butter
3 c oatmeal
1 ts pure vanilla extract
1 pn salt

Instructions

In a saucepan, combine butter or margarine, cocoa, sugar and milk.
Bring to a boil and boil 1 minute. Remove from heat and stir in
peanut butter, oatmeal, vanilla and salt. Drop from a teaspoon onto
waxed paper and allow to cool.

Makes about 3 dozen.
 
Rich and Famous Brownies

1 cup evaporated milk
2 cups miniature marshmallows
1 cup semisweet chocolate chips
1/3 cup sugar
1/8 tsp. salt
1 tsp. vanilla extract
1 tbsp. Butter
3 cups Thin Mint cookies crushed info crumbs
1/2 cup nuts (chopped)

Mix together milk, marshmallows, chocolate chips, sugar and salt in microwaveable bowl. Bring to a boil in microwave. Stir well and cook in microwave an additional 2 minutes at medium heat. Remove from microwave. Add butter, vanilla, and chopped nuts. Break Thin Mint cookies into crumbs and add to mixture. Pack into a 9 in square pan. Refrigerate to harden. Cut into 2 inch squares.
 
I personally do not have a nuker, however, my friends to and they say that on most packaged cookie and cake mixes they have microwave instructions.
 
Chocolate Peanut Clusters

350 gram pkg semisweet chocolate chips
1 can Eagle Brand milk
2 cups Rice Krispies
1 cup peanuts

Melt chips in Eagle Brand milk.

Stir in Rice Kispies and peanuts.

Drop, a spoonful at a time onto waxed paper.

Chill two hours.

Chocolate Macaroon Cookies

2 cups white sugar
1/2 cup milk
1/2 cup butter
3 cups rolled oats
4-5 tablespoons cocoa
1 cup shredded or flaked coconut
1 tsp vanilla
pinch of salt

Commbine sugar, milk and butter and bring to a boil.

Stir in remaining ingredients and mix well.

Drop by teaspoon onto waxed paper.

Cool and keep in the fridge.

Pineapple Upside Down Cake

1/4 cup margerine
1/3 cup brown sugar
1 can pineapple slices
1 pkg cake mix
1 egg
Juice from pineapple slices plus enough milk to come to 1/2 cup total liquid
1 tsp vanilla

In an 8" round dish, place margerine, and nuke on high 30-60 seonds.

Sprinkle sugar over margerine.

Arrange pineapple slices (drained!) in the dish.

In a small mixing bowl, mix cake mix, egg, milk/pineapple juice and vanilla, beat for 3 mins at low mixer speed, scraping the bowl for the first minute....

Carefully pour the batter over the fruit slices in the dish, nuke it on high for 10-13 minutes.

Invert this onto a plate, and after a few minutes, remove the dish...

Serve warm...

(Me being me, I like it with whipped cream!)

Chocolate Fudge

2 tablespoons butter
160 ml evaporated milk
1 2/3 cups sugar
1/2 tsp salt
2 cups minimarshmallows
1.5 cups chocolate chips
1 tsp vanilla
1/2 cup chopped nuts (optional)

Combine butter, milk, sugar and salt, and bring to a boil.

Stir and continue cooking 3-4 minutes, removing and stirring every 30 seconds (if doing it in a microwave; constantly if doing it "stovetop")

Add chocolate chips, marshmallows and nuts, stir until fully melted. Pour into a pan and chill.

Grandpa's Chocolate Fudge

4 cups icing sugar
8 oz cream cheese
1/2 cup chopped walnuts
4 x 1 oz squares unsweetened chocolate, melted
1 tsp vanilla
Pinch of salt

Soften cream cheese at room temp, add sugar and mix.

Stir in melted chocolate, salt, vanilla and nuts, mix well unil smooth.

Press into 8" square pan, chill several hours.

Makes about 1.5 pounds...

Peanut Chew

1 cuo creamed honey
2 cups semisweet chocolate chips
1 cup smooth peanut butter
2 cups salted peanuts, chopped

Combine honey and chocolate chips in a saucepan, placing over low heat until the chips start to melt, stirring often. b Increase heat to medium high, and cook, stirring constantly until the mix begins to boil. Remove pan to a hot pad. Add peanut butter, stir intil the mixture becomes smooth. Add peanuts, stir until well mixed.

Pour into a greased pan, using a spatula to cleanout the saucepan, and to spread evenly to sides and corners of pan; let pan sit on counter for several hours. Put in the fridge for 15 mins before cutting...makes 24 "bars"

No Bake Brownies

1 cup evaporated milk
2 cups mini-mallows
6 oz pkg semi-sweey "chipits"
1.2 cup sugar
1/4 tsp salt
1 tablespoon butter
1 tablespoon vanilla
3 1/3 cups fine grahama cracker crumbs
1 cup chopped nuts

Bring first 5 ingredients stirring over medium heat to a full boil; boil, while stirring, for 5 minutes.

Remove from heat.

Stir in butter, vanilla, crumbs and nuts until well blended.

Spread in buttered/greased 9" pan, press down with hands.

Chill one hour, than cut into squares.

Kaylee's Rice Krispy Square

1 lg bag marshmallows
9 cups Rice Krispies
2 tablespoons butter/margerine
1 tsp vanilla

Melt butter in a large bowl for 35 seconds.

Mix in marshmallows until well coated with butter.

Nuke on high for 2 minutes.

Add vanilla, then Rice Krispies and mix well.

Press down firmly into 9x13" cakepan, and chill overnight.

In the morning, take out of fridge and let stand one hour.

No Name Slice

Bottom Layer:
20 arrowroot cookies, crushed to small pieces1/2 lb bag mini-mallows
1/2 cup chopped pecans

Middle Layer:
1/2 cup white sugar
1/2 cup butter
1 egg, beaten
1 tsp vanilla

Icing:
1/2 cup butter
2 tablespoons boiling water
3/4 cup icing sugar
2 tablespoons cream

Bottom Layer: Mix crumbs marshahmallows and pecans and put in the bottom of a 9"x9" pan

Middle layer: Bring white sugar, butter and egg to a boil, stirring constantly until mixture is clear. Add vanilla. Pour over Bottom Layer.

Icing: Combine butter and boiling water, beat for 1 minute. Add icing sugar, beat another 2 minutes. Add cream, beat another minute. Pour over Middle Layer.

Apple Crisp

6 cups peeled sliced apples
3/4 cup brown sugar, packed
1/2 cup flour
1/3 cup brown sugar, packed
1/3 cup quick cooking oats
1/4 cup butter
1/2 tsp cinnamon

Place apples and 3/4 cup brown sugar in 9" square pan. Blend remaining ingredients until crumbly, sprinkle over apples.

Microwave at High 9-12 minutes, rotating dish a half turn after 5 minutes.

Let stand before serving.
