I have some oyster sauce a few years old in the fridge, and it is still good. That, fish sauce, kecap manis, and Chinkiang vinegar are some of the things I keep in the fridge, since even though they say they have a 6-12 month shelf life, that's at room temp., and I've had it go bad at room temp., but never in the fridge, before I used them all. Oyster sauce I use the least of, so I have kept it the longest, and it never went bad.

I think it might be because it is seafood-based.
It's kind of like Better than Bouillon. It's such a concentrated, salty substance that I can't see how any pathogen could survive, much less reproduce, in it. All food pathogens require moisture to reproduce and salt absorbs water.
