Oh--crap. I over evapped the sap, it didn't burn, but now I'm "chiseling" the sugar out of the pans. It is a very pretty light "yellow" but that wasn't what I planned on having. I thought I'd pop it in the freezer in case it isn't as dry as it should be--but I have no recipes for maple sugar--anyone?

Wow, I remember going to the Maple Sugar festival in Michigan growing up. If I ended up with sugar, I would probably eat it until I was sick. We used to love the maple sugar candy (in the shape of a maple leaf) that we would get before riding the swing ride. It was pure maple sugar and SO good!
