Pizza Oven Old and melting.

At pizzeria that I work at we recently got a replacement oven. Apparently the old oven's heat shield was literally melting. Should that be possible?

I would say no, assuming the oven was operating properly.

However, if something went wrong causing a build-up of heat over the maximum safe temperature, melting could occur. Lucky it was replaced before the building burned down.

I don't know but it sounds like the heat shield/baffle burned out.

It wouldn't matter. It's Buffalo. There's at least one pizza joint on just about every block.

Working there. The pizza recipe is ok. Our location might be the only reason we survived the pandemic.
