SAF Instant Yeast

I just noticed my jar of instant yeast is running low.

I've looked online for SAF Instant Yeast and I find two different kinds: Instant, instant red.

Anybody know what the differences are?

SAF makes quite a number of instant yeasts...

The two most common are red and gold, with gold being more effective with sweeter doughs (up to 30% sugar), with red spec'd for up to 12%.

Thanks Scott. I ordered the Red. Seems to be the best all-purpose choice. Also, King Arthur's site recommends it.

The red is the most common, though the premium, also in a red package, is better for cooler dough, like pizzas, and for bread machines, if I recall. I always get the regular red.
