I made some honey butter yesterday (unsalted butter, honey, vanilla extract, kosher salt). Can I assume this will store in the fridge for the same period as butter, or are there other considerations I should be aware of?

Honey is a hypotonic solution. Itliterallybsucks the moisture from microbes, killing them, Honey from New Zealand is so effective, it is used to treat Mrsa, which is antibiotic resistant.

Both salt and sugar are preservatives as they too draw the moisture out of microbes. The only thing in your honey butter that can go bad is the butter, as it is a fat. Fats will, over time, oxidize and go rancid. As long as your honey butter is stored in an air tight container, this shouldn't be aa problem.

And no, my name isn't Alton Brown.
