Using Ash in Cooking

I have seen a couple of restaurants who have been using ash in their recipes and want to have a go at creating an ash at home. Can anyone share their experiences in creating ash to be used in cooking or share any techniques in making ash.

The only way I know of to make ash is to burn things. Make sure it's non-toxic.

How do they use it? I've never seen that.
 
The only use that I was aware of is the Indian tradition of treating corn with ash in order to remove the hull and improve nutritional value.

I did a little googling and found this Great British Chefs site with a page about How to cook with ash. Beware though, when this page discusses treating corn with an alkaline like ash it is misleading or wrong.

I virtually never eat in restaurants of any kind and certainly not ones like Denmark’s Noma (a.k.a. “the best restaurant in the world“) where ash is said to be used. Sounds awful but so did a lot of good stuff before I tried it.

I don't cook with ash but, *my Jeannie used to cook things to ash so, I do the cooking now... :LOL:
