Hello. I was reading about how to make kombucha. Many articles mention the use of scoby (symbiotic culture of bacteria and yeast), which ferments the sugar in black tea (the other ingredient for making kombucha). I am just wondering if I can use fresh orange juice instead of black tea to feed my scoby with.

Also, both kombucha and wine are products of bacterial and yeast fermentation. My question is, how exactly are they different?

Thanks.
