To cook noodles and make them get soft, what is the best temperature?
I mean instant noodles, ramen. 80°C, 90°C?

Boil your water/stock/broth, pour it into a bowl - add noodles. Cover, let stand for 2 or 3 min.

All the ones I've had this is what you do... you are not 'cooking' them, just softening.

oh oh, not true, just remembered there was one where I boiled the broth on the stove, added the noodles and simmered for 2or 3 min.

but what is a good boiling temperature? I would like to know the celsius

You don’t need to know the temp of the water to cook ramen. Heat the water until it’s very hot and little bubbles start forming.

Then add the ramen. You don’t need to use boiling water, just very hot water.

You don’t need to cook ramen. You just rehydrate it
