Why - do I have to follow directions?

You can improvise to an extent in baking, once you understand the rules.
Just like actors in a scripted drama sometimes have a little leeway with their dialogue sometimes. But you can’t go off-script (that would the rules).
 
I improvise all the time at home. When I worked developing and testing recipes, every thing was weighed or measured and each step captured so others could recreate the dishes in their kitchens. When cooking at home, I don't use recipes, I figure out the flavour profile and work from there. I taste what i am making constantly. It works for me.
 
[FONT=&quot]I had some grand parents that never measured much mostly just scoop it in and get it on or in the stove and it was some of the best food I have ever ate.
My grandmother did a lot of cooking on a wood stove at home and during the summer head cook at a resort. I only wish I had paid more attention when they were still around. Every thing from soup to caramel rolls to soup.[/FONT]
