Ms. Mofet's Instant Pot Fresh Strawberry Compote
Prepared using a 6 QT. Instant Pot (I have a Duo and an Ultra)
This is my Original Tried & True Recipe/Technique/Instructions
IMPORTANT: Be sure the inner pot is in base unit and gasket/ring is in lid and seated properly before beginning.
Makes ≈2 cups
1 lb. Fresh Strawberries washed, trimmed and cut in half or quarters
1/8 - 1/4 C. Sugar or to taste
Splash Fresh Lemon Juice
1 tsp. Cornstarch
1 TBSP. Water
Add strawberries to inner cooking pot.
Sprinkle with sugar and let sit 10 minutes.
Add a little splash of lemon juice.
NO Water necessary strawberries produce enough.
Lock on lid and set valve to sealing
Select Manual/Pressure Cook mode, High Pressure adjust +/- to 1 minute.
When Beep sounds, allow a 15 minutes Natural Pressure
Release (NPR). Then quick release (QR).
When the pin drops open the lid.
Select Sauté mode and adjust to "More" setting.
Make slurry of water & cornstarch. Add to boiling strawberries and stir till thickened, about 1 minute.
Fills approximately 2 (8 oz.) Mason jars.
Place in jars and refrigerate.
Compote will thicken as it cools.
