Broccoli and Cauliflower Casserole - TNT

This is a good side dish - easy to make - easy to bring - good comfort food:

Broccoli and Cauliflower Casserole
2 bags of broccoli and cauliflower combination (totaling 2 lbs)
2 cans cream of celery soup
2 eggs
½ c mayonnaise
2 cups cheddar cheese (I use sharp)
2sleeves of crushed ritz crackers - divided

Mix all ingredients together - reserving one sleeve of ritz crackers to go on top of casserole before baking it at 350 degrees for 45 minutes. If all oven space is being used (Thanksgiving, for example) microwave for 1/2 hour.
 
Sounds yummy!!! Think subbing cream of mushroom for the celery would work? I think I'll make this this weekend!!!!
 
Mmm... I've made something similar but I usually use cream of mushroom soup. I think cream of celery would be really tasty though...

Thanks for sharing. It sounds like a good, easy, potluck dish.

Grumblebee says yes - and I see no reason why not. I think I will have subsituted cream of mushroom or chicken in the past when I didn't have the cream of celery. I hope you enjoy it!
 
Such a great homey sort of dish (I adore broc & cheese!!), reminds me of childhood potluck meals that we'd have at the annual autumn potluck that my elementry school held :)
