Butternut squash - how's this sound?
I had a squash that I needed to use up. I peeled it and seeded it then I shredded it somewhere between a hash brown and a shoestring potatoe size. I'm thinking about sauteing them in butter with s&p and maybe adding a little lemon. Does this sound like a plan? What would you do with them? I will be serving the squash with some kind of chicken.
