6 small white potatos (all about the same size)
2 tablespoons of REAL butter
1.5 Tablespoons of sugar
1 or 2 tablespoons of water IF you need it
Boil & peel potatos let cool
In a large frying pan, cook the sugar on low-medium heat until completely melted..............do NOT stir
When melted added the butter and stir until the two are combined into a syrupy mixture.
Add the potato (& a wee bit of water)
note: if the mixture starts to stiffen & form lumps, just turn the heat up & it will melt again
Slowly rock the pan around to cover each potato in the mixture,
continue cooking for 8-10minutes
arrange in a pretty serving bowl & sprinkle fresh parsley over the top
and going to serve this with Beef Wellington w/a twist
