Greta Garbanzo Salad

Don't you just love saying "gar-ban-zo"? Sounds
like a super-hero (or heroine;-). They are also
called chickpeas.

Drain and rinse one can garbanzo beans.
Add a bit of chopped red onion, chopped fresh
mint, a dash of curry powder. Drizzle some olive
oil and vinegar - mix gently and serve!

Optionally, mix in some cooked green beans,
chopped red pepper or chilled cooked cauliflower.
You can also substitute chopped parsley and
a dash of Tabasco for the curry and mint.

Great side with any meal. Add to salads or
serve as a side to any meat, fish, pork or chicken.
For vegetarian meals, chickpeas are a great
source of protein. Add cooked cous-cous or
tunafish for delicious quick lunch.
