Harvard Beets- TNT (sort of)
OK I don't eat these because I hate beets but I have made them for my mom on several occasions & she loves them.
1/4C cider vinegar
1/4C. granulated sugar
1/2tsp. prepared mustard
1/2Tbsp. butter, melted
2C. cubed cooked beets
Combine vinegar, sugar, salt, mustard, flour, & butter until well blended; cook over low heat, stirring constantly until thick. Pour over cubed beets & stir to coat. Serve immediately.
