These are commonly filled with breakfast foors, such as ham, cheese, onion, then baked. They cam be used for so much morel Here's the basic recipe.

2 large russet potatoes
1 tsp salt
1/2 tsp. ground pepper
1/2 tsp granulated garlic
2 cups cold water

Peel and grate the potatoes. Place in the cold water and swish around for 5 miutes to remove excesss starch. Srain the spuds and rice 3 times. Remove to a walad spinner and spin to dry, or put in a town and ring it out to remove extra moisture. spread bacon, or pork fat, all over the insdes and bottom of oversize muffin tims, or ramekins. mix seasonings with the potatoes. Place 1/3 cup shredded potato mixute into the muffin pan sections. Press to the bottom and up the sides to crate liggle potato cups. Bake at 375 for 15 minutes.

Now, think what you could fill with these. Insteadof biscuits with sausage gravy, you fill the potato cups. Fill lthem with pulled pork, or sloppy joe filling, or bolanaise sauce. Fill with ground beef and cheese. The possibilities are unlimited. Try it. You;ll enjoy the results.
