How to freeze fresh (sweet) corn

Hello -

I'm looking for a tried and true recipe for freezing sweet corn.

Any and all replies are appreciated.
 
Welcome to DC! I blanch 8 ears at a time in a LARGE (20 l) stock pot. I add a splash of milk and sugar to the water. Once the water returns to a boil, I blanch for 4 minutes, rinse, and put in ice water (I freeze 2 l bottles and just put those in the sink with the corn). Let it chill for the same amount of time it cooked. I transfer the ears to a collander and then cut off the cob using an electric knife and an angel food pan.

I normally do like CWS but tried a different method with good results. This is what I did ...

Combine in a large bowl:
20 C Corn (unblanched, cut from the cob)
2 Tbl Salt
5 C Ice
1 C Water

Stir periodically until ice is melted. Scoop corn and resulting salt water into freezer bags, removing as much air as possible and freeze.
