ISO: Citrus Sauce/Marinade for Veggies

I want to put together a Mexican inspired vegetable side, either raw or quickly sauteed. Right now, I'm thinking of tossing veggie chunks with some lime (and orange?) juices with some cilantro and spices. But, nothing is feeling quite right. Any suggestions or TNT recipes out there?

You can make a grated jicama and carrot salad. Just grate jicama and carrot in a food processor. Put in a bowl, add salt, sugar, cayanne pepper to taste. Chopped cilantro, lime juice and let it sit covered for an hour before you serve.

In addition, you can roast some sweet potatoes. Peel cut into cubes. Make a dressing with oil, lime zest, one clove of minced garlic lime juice, cumin powder, cayanne powder, brown sugar and salt. Pour over sweet potatoes and roast them until tender.

Remove when done and put some chopped cilantro before serving.

Finally a simple avacado and tomoto salad is always good. Cut them in big chunks (avacado's and tomatoes both), freshly chopped cilantro, lime juice, lime zest, a finely minced jalapeno (seeds and membrane removed). Stir together and let it marinate in the fridge for atleast an hour before you serve.
