Made borcht the other day and got a little carried away with the amount of beets I needed.
I have some left over and would like to pickle them. My dad used to make them 100 years ago.

Not planning on canning them, just pickle, then eat.

Anyone have any recipes the recommend ?

Quick Pickled Beets

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 cup water
1/2 cup vinegar
1 tablespoon brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon cloves
2 cups sliced, cooked beets

Heat first six ingredients to boiling. Pour over beets. Let stand six hours.

Bookbrat, the ingredients list leads me to believe that the end result is not too sweet. Am I right? Most of the recipes I've seen call for so much sugar they might as well title them "Sugar Pickled Beets". Bleh. Not our style, but if people love it, go for it.
 
My mother always used just vinegar water down a bit. She also added some thinly sliced onions for my father. I just love beets any way as long as they are cooked. :angel:
