The discussion about dinner in a pumpkin reminded me of this idea for little stuffed pumpkins - as a side (for Thanksgiving) or as a dessert.
Wash your mini pumpkins, slice off the top (for a lid) & save, scoop out the seeds/insides. Preheat your oven to about 350 and place your little pumpkins w the lides on, in a baking dish filled w about an inch of water. Bake about 30 mins or until soft. About halfway thru cooking time, add mascarpone or cream cheese - or (mini) marshmallows. Sprinkle w cinnamon if desired. Other fillings for the minis - stuffed with dressing/stuffing, mashed/cooked sweet potatoes - or serve the pumpkins as a dessert, filled with ice cream (flavor of choice). A two-fer idea - bake some apples in the same dish at the same time. Stuff the apples with cinnamon, brown sugar, walnuts, raisins, and/or caramels or maple syrup - whatever you like.
