Marinated Tomatoes

This is one of my father's recipes and one of my wife's favorites.


1/2 cup vinegar **
2/3 cup extra virgin olive oil
1 tsp. salt
1/4 tsp fresh ground pepper
1 tsp fresh thyme *
1 tsp fresh tarragon **
1 tsp fresh oregano *
8 leaves of fresh basil -- chopped (6 to 8)
1 pkg. sweet-n-low
1/2 tsp Tabasco sauce
1 large clove garlic -- finely chopped
4 green onions -- including tops,
chopped
3 large tomatoes cut into 1/2 inch wedges

Combine all ingredients, except for the tomatoes, in a medium sized bowl. Whisk until well blended. Add tomatoes and toss lightly. Cover and marinate in refrigerator for one hour or until ready to serve. Stir occasionally while marinating. Place tomatoes in serving dish and pour marinade over them. Makes 4 to 6 servings

Note: Best when fresh herbs are used!

* If dried thyme or oregano is used, use 1/2 tsp.
** If fresh tarragon is not available, use tarragon vinegar.
