I got this from a dear friend and love it.
Potatoes Romanoff TNT
8 medium potatoes (quartered)
2 tablespoons butter
1 cup sour cream
4 green onions, (whole, chopped)
1-1/4 cups shredded Cheddar Cheese
1 tsp. salt
1/8 tsp. ground black pepper
1 tsp. paprika
Boil potatoes until tender. Mash the potatoes with butter, sour cream, onions, 3/4 cup shredded chedddar cheese, salt and pepper. Turn mixture into a buttered 1-1/2 quart casserole dish. Sprinkle with remaining cheese and paprika. Bake, uncovered at 350 for 40 minutes.
I have made this in the morning and stored it in the fridge till I needed to bake it for dinner that night.
