Rösti, Smoked Salmon and Sour Cream Sauce

Sour Cream Sauce

½ cup fresh cream
1tbsp Dijon mustard orhorseradish
½ lemon zest
Dill or parsley shopped fine
Salt and pepper

For the röstis:

6 potatoes
1 sweet potato
Green onions
Olive oil
Better
Smoked salmon
Salt and pepper

For the sour cream

Mix every thing

For the röstis

Preheat the oven to 150C

Grate the potatoes with a(large hole) cheese scraper , press the potatoes firmly, add the chopped onions.

In a skillet heat the butter and the oil, when it is hot put 1 tsp of the mixture and press with a spatula to form a flat cake, cook for about 5 minutes on each sides.

Put in the preheated oven and cook for 10 minutes

Put the röstis on the plate, add some cream and smoked salmon.
 
you can do both, pre-cook the potatoes or grate them raw, but I like them raw, just make sure is no water left in them.
