Sauced Zucchini

3-4 zucchini
1 medium-sized can tomato sauce
garlic powder
onion powder
ground sage
dried oregano
dried basil
seasalt
black pepper
-----------------------------------
wash and slice zucchini.
mix remaining ingredients to taste. (i'm sorry i don't have amounts, i just kind of throw in spices till it looks right.)
add zucchini and simmer till zucchini is tender. serve with Italian bread and butter as a side dish. chicken works well as a main dish for this.
 
My husband grows zucchini and we end up getting flooded with it. I also make a similar dish as this, however, I melt some butter and EVOO in the saute pan, to which I add the zucchini, onion, chopped garlic, if we have them, fresh garden tomatoes (which we usually do at the same time the zucchini is harvested), and spices you mentioned (omitting the onion and garlic, as use fresh). Just saute long enough for the zucchini to soften, but not get mushy. It really is good as a side dish with just about any meal, and can freeze well.
 
We love zucchini around here. Thanks luvs this is very much like a recipe I have called Greek zucchini. Like Cats I add EVOO and sometimes black olives and garlic. LOTS of garlic.
