Sauteed Lemon Garlic Broccoloini

One person commented when I mentioned we made this for dinner yesterday, so I thought it worthwhile to share the recipe I used. It's really easy and we really liked it. The google of course has bunches of choices, so this may narrow it down if you choose to make this.

Sautéed Lemon Garlic Broccolini

6 oz (170 g) broccolini, ends slightly trimmed , diagonal cut for looks
sea salt for water
2 Tbsp butter or olive oil
1/2 Tbsp lemon zest
2 large cloves garlic, pressed or more to taste
1/2 Tbsp freshly squeezed lemon juice, maybe a little more if you like lemon
1/4 tsp freshly ground black pepper

Blanch the broccolini in a large pot of boiling salted water for 2 minutes. Check stems for doneness -- crisp tender or slightly softer with a knife tip. Drain immediately and immerse in a bowl of ice water to stop the cooking process for 2 minutes. Re-transfer to the colander to drain. Use a salad spinner or a paper towel.

In a large skillet over medium heat, melt butter. Add lemon zest and pressed garlic; stir constantly for 1 minute. Pour in lemon juice, stir to blend and add broccolini; toss to coat. Crack some freshly ground black pepper and toss until heat through, about 1 1/2 minutes. Serve immediately – 4 servings

Served two no leftovers.
