Small sweet potatoes

I have 6 organic "fingerling" shaped small sweet potatoes. I peeled them as the peel was too not smooth to roast them. They are in salted water. What to do with them for dinner?? Just DH & I.

Douse'em in olive oil, salt and pepper and maybe some thyme and roast them in the oven until tender. Simple, easy, delicious.

I'll try that. Always before I left the peel on. This might actually work better. Thanks!
