This is good marinated for an hour but overnight will make you smile too. This can take the place of the green salad if you'd like.Slice 4 zucchini and 4 yellow squash paper thin into a large shallow bowl.Add1/2 cup chopped celery,1 red onion finely chopped, (you can omit the celery,bell pepper red onion if you prefer all squash).plus 1 red bell pepper chopped,put 1 cup red vinegar in a saucepan.add 1/2 cup sugar, 1/3 cup evoo,salt and pepper to taste. Bring to boil to dissolve the sugar. Pour over thesquash while mixture is still hot.Cover and marinate at room temp or chill over night. Drain then serve.
