Turnips with Spiced Caramel

Serve 4
1 long white turnip
113 grams sugar
1/2 tsp 4 spice mixture
1/4 cup water
Coarse salt and freshly ground pepper

Wash and pare the turnip
Cut into 1 cm thick and trim with a cookie cutter
Parboil the disk of turnip in boiling salted water, refresh and drain on paper
lightly caramelised the sugar with the 4-spice and about 1/4 cup water in a frying pan
Add the turnips and stir on a low heat until caramelised
When the turnips are golden, remove from the heat and season with the salt and pepper
 
This is four spice mixture

1 heaping Tbsp black peppercorns
2 tsp whole cloves
2 tsp freshly grated nutmeg
1 tsp ground ginger
