I'm new to the site and thought I would share a vegetarian recipe that is easy to make in the slow-cooker and delicious.

1/2 cup diced onions
1/2 cup diced celery
1 cup of baby carrots or coin sliced carrots
1 large potato, diced with skin on
1/2 cup frozen mixed veggies
1 can of garbanzo beans (I use organic valley), drained

Put all of this into the crockpot and sprinkle with parsley and italian seasoning:

Next, in a small saucepan, take 1 package beef stew seasoning (look in the health food store for a brand with no beef stock). Mix the seasoning packet with 1/2 cup of water and stir until it is dissolved. Make a flour/butter roux and add to the seasoning mix in the saucepan until it is a gravylike consistency.

Add you sauce to the crockpot and stir. Cook on LOW for six hours.

Delicious over homestyle mashed potatoes, rice, or buttermilk buscuits. use as a filling for homemade veggie pot pies.
