WHAT YOU NEED:

1 REGULAR SIZE CAN TOMATOE SAUCE
2 LARGE CANS CRUSHED ITALIAN STYLED TOMATOES
ABOUT 2 CUPS CUT UP SQUASH (YELLOW&ZUCINNI)
1/2 CUP CARROTS CUT JULIENE STYLE
1 CUP FRESH MUSHROOMS
1 CLOVE GARLIC MINCED
1 TSP BASIL
1/2 TSP TYME
1 TSP PARSLEY
1 TBS SUGAR
SIMMER UNTILL VEGGIES ARE TENDER
SERVE OVER WARM PASTA

I love using carrots in spaghetti sauce. My mom always did it when we were kids (along with bell peppers), and so if they're not there it almost doesn't taste like spaghetti sauce to me :)
 
fantastic recipe! :)

also for anyone Gluten intollerant, there are Squashes that you can buy or even grow yourself called Vegetable Spaghetti, it`s a chinese type squash. and you simply cut the squash from top to boton into quarters, remove any seeds then plunge into rapidly boiling salted water for 10-15 mins, drain it off allow to cool a little and the flesh comes off in spaghetti like strands (looks very much like Glass Noodles) you can freeze this also.
the best part is that it`s almost impossible to overcook it (unlike pastas).

so now there`s little to no excuse to not try the OPs recipe :)
 
try a variety of vegetables in a rich tomato sauce flavored with rosemary and saffron, or use fennel and basil as your herbs for a sweet change.

Gluten free: have you found polenta pasta (corn meal) or Quinoa pasta? both are excellent and gluten free. Spaghetti squash is great too.
