What can I do with shredded beets?

I made a beet cake and shredded way more beets than I needed. I have about 2.5 cups leftover. What can I do with shredded beets? Would I eat them raw on a salad?
 
Marinate them with oil and vinegar salt and wasabi or regular horseradish and serve in arugula or watercress with a dollop of goat cheese on top.

I've had them just sprinkled on top of a garden salad. They add a nice color. The first place I ever saw this was in a national chain restaurant. I thought it was a good idea and had real eye appeal so I do it at home when possible.
 
I love shredded beets with this orange vinaigrette:

Zest and juice from an orange
3 T sherry vinegar
1/2 T honey
1/4 c extra-virgin olive oil
sea salt
freshly ground pepper

Earn extra points by adding goat cheese or feta.
 
Make Red Flannel Hash.

One can of Roast Beef or Corned Beef Hash with the shredded beets mixed in. An old New England favorite. :angel:
