This is so tasty. Hope you love it too. Trim the ends of the zucchini then cut into 1/4 rounds. Use 1-1/2 lbs of the smallest zucchini you can find. Pour 1 inch deep veggie oil in large skillet. Oil is hot enough when I 1 inch cube of bread turns golden right away. Place zucchini slices a few at a time
in a sieve then sprinkle with flour you will need about 1 cup shake of any excess flour. Using a slotted spoon lower the zucchini in the hot oil. When golden on both sides remove from oil with slotted spoon.Place on paper towels to drain.When all are cooked place in salad bowl. Season with slat and pepper and 3-4 Tab. red wine vinegar.
