Chief' Stuffed Manicotti
A favorite in my home, this hearty meal is comfort with a capitol C. A flavorful sauce combined with herbs, ground beef, and veal, cottage cheese, Veggies, and Pecorino Romano cheese combine to bake up into a filling and flavorful dish that is so versatile so as to please every palate. You can change it up with your own version, using a pesto, or Alfredo sauce, or a classic Bolognaise, or even a creamy mushroom sauce. This is our favorite version.

wide Dutch oven
19oz. crushed tomato
6 oz. tomato paste
3/4 lb. 80/20 ground beef
3/4 lb ground veal
1 tbs. minced garlic
2 tsp. dried oregano
2 tsp. dried basil
1/2 tsp. dried thyme
1/2 tsp dried rosemary
2 tbs fresh minced parsley
1 yellow onion, minced
1 lb. minced button, oe cremini mushrooms
1 cup cottage cheese
1/2 cup grated Pecorino Romano, or Asiago cheese
2 tbs. olive oil
Heat oil in a large frying pan. Add onion, and garlic. Cook over medium heat for 2 minutes, stirring frequently. Add the mushrooms, and ground meat. Brow, breaking up the meat. Add the herbs and cook for 2 more minutes. Add tomato products and stir to incorporate evenly. tir in the cottage cheese. Remove from the heat. Bring 1 quart of water, with a tbs of salt to a boil. Insert the noodles, and cook for 5 minutes, just enough to make the pliable enough to open up. rain. and lightly coat with olive oil to keep them from sticking together. Fill the cookie press with the filling, and insert the tipples end into one end of the noodles. Press the plunger to force the filling into the noodle. Place a thin layer of sauce into the bottom of an oiled casserole dish. Place filled noodles into the dich. Cover with remaining sauce/meat mixture. Cover with Romano cheese. Cover with lid, or foil, and bake at 350' F. for 20 minutes. Serve with steamed veggies of choice, and garlic bread. Enjoy.
