We all love our bead, cornbread, and rice dressing/stuffing with roasted birds of any kind. I have a side that I've come up with that may become as much enjoyed, at least I think it's pretty good. I give you, Savory Orzo, with Rice. The flavor is like a good sage dressing, or can be change to what you want. Here's how I like it.

Ingredients:
3 cups bird broth (turkey, chicken, goose, or duck)
1 1/2 cup orzo
1 1/2 cups rice
1/4 cup diced onion
1 carrit, grated
2 stalks celery, sliced
2 tsp. rubbed sage
1/2 tsp. dried thyme
1 tsp. salt
1 tsp. ground black pepper

Combine all ingredients in a 2 quart saucepan. Bring to a simmer. Cover and reduce heat. Cook for 25 minutes. Taste and correct the seasoning.

The texture is great. The flavor is great. To me, it's better than green bean casserole. Just saying.

Sounds yummy Chief, will copy and paste - have to do a goose next month, sounds like it will fit the bill!.

LOL - is it OK if I reduce the broth to 3 cups instead of the 31 listed?

Did I realky mistype that to 31 cups? Wow! I must be getting old. Wait! I was old last year! Now I'm douwnright ancient. I' been told that I'm old enough to have invented the Wheel. That's just utter nonsence. I did however, invent tha axle that joined two wheels together to make them useful.
