Quinoa with Black Beans

This is a side dish from Eat Better America, named Quinoa with Black Beans:

1 cup uncooked quinoa (don't think the color matters), 2 cups chicken or vegetable broth, 1 cup black beans (from 15-oz. can, drained and rinsed), 1/2 cup frozen whole kernel corn (thawed), 1 small chopped tomato (1/2 cup), 1/4 cup chopped fresh cilantro, 4 medium green onions chopped (1/4 cup), 1 tablespoon fresh lime juice, 1 clove garlic finely chopped, and 1/4 teaspoon salt.

You can't substitute couscous for quinoa.
 
Sounds like real tasty side.

I made one last week with quinoa,tomatoe.cucumber,cilantro,green onion and a splash of olive juice for dressing.

We loves our quinoa roun here!
 
Welcome to DC! I love quinoa every which way. My brother spends about 3 months a year down in S.A. and brings back all kinds of creative ways to use quinoa. There are several recipes for quinoa posted--if you can't find them in the forums, let us know, we will lead you to quinoa. I hope you enjoy being part of DC!
