Moving to a new city has taken far more time than we anticipated. Our son, who is 14, had to start at another school. He took some fried rice to school one day for lunch and came home hungry because his friends had eaten it all, declaring that it was the "best fried rice they had ever tasted" and "can you bring some more tomorrow?". He now takes three containers every Friday which he shares with his friends. Food as a bridge to friendship, a good thought.

Fried Rice

Ingredients: 0.3kg rice, 1 medium sized carrot, 1/3 cup of peas, 100 gms meat (you can use more or less to taste), 2 eggs,5 dried mushroom, 6 prawns, 2 spring onions.

Seasoning: 2 tablespoons of oil, a little salt (to taste), 1 tablespoon of regular Soya sauce.

Preparation: Cook the rice the day before (see ‘How to Cook Rice). The grains must be able to separate easily. Put the dried mushroom into water at least 2 hours before you cook.

When you are ready to cook: Chop the mushroom, carrot, meat and spring onion finely. Beat the two eggs, heat wok or frypan, add small amount of oil, pour in the beaten egg so it spreads out evenly to appox 1/2 - 1cm. When cooked slice into small pieces.

Cooking: Heat the Wok and put in a little oil. Stir-fry the meat, mushroom, carrot and peas for approx 6 - 8 minutes. Take out and put in a plate. Put more oil in, add the rice, stir-fry for 6 minutes. Put in the salt and Soya sauce and stir fry a further 2 minutes. Replace the meat, mushroom, carrot and peas and stir-fry 2 minutes. Put in the pieces of egg and the spring onion, stir-fry for 1 minute, OK can eat, Hao Chi.
 
I've been wanting to make some really good fried rice and that recipe sounds like the ticket. I would love to see some pictures too but keep the recipes and stories coming if you can't.
