Last November there was a thread about pork and there was a link to a recipe in one of the posts. It was for a garlic roasted pork shoulder that was a traditional Christmas Eve dish for Cubans in Miami (and elsewhere too I suppose). The recipe in the link sounded really good so I clipped it and made it for dinner tonight.
It was a marinated Boston butt served with black beans and rice and a citrus mojo. WOW it was delicious!
The pork was truly amazing. Marinated in a ton of garlic and citrus and roasted, it was mouth-wateringly delicious. The black beans were also very good.
