I know near me, many of the local county universities offer adult classes on many cuisines, including chinese. I never have taken any of them, so im not sure how ' professional' they are.
I also once saw Martin Yan do a demonstration at one of the local wineries. Apparently he has a chinese culinary school in china.
I've begun seriously thinking about a 2 or 3 week cooking holiday in Asia in a couple months. I haven't decided anything, but I like the idea of mixing and matching different schools and teachers in a few places.
I want to see if a school in Taipei can design a four or five day class for me
I also want to find somewhere similar in Thailand but they all seem to be targeting groups with very quick basic classes. I'm going to ask them what they can do for me anyway.

Does anybody else have any suggestions about good classes in Asia where I can get a private teacher at non-basic level. I mean serious intermediate or even advanced standard, but not a professional culinary school, I don't have the time for that now. I business travel in Asia very often, but I've never had time to indulge my interests before. I'm interested in Chinese and Thai especially.
