Moroccan Spicy Fish Tagine with Peppers & Olives

Ingredients

4 large fish fillets: such as halibut or orange roughly,sea bass, bream or red snapper
½ cup light olive oil
¼ cup chopped fresh flat parsley
3 garlic cloves, chopped
3 tbsp chopped fresh coriander
1 tbsp Hungarian sweet paprika
2 tsp ground turmeric
1/8 tsp crushed saffron threads
1 pound carrots; peeled, thinly sliced
1 ½ pounds tomatoes,; thinly sliced
1 large onion, thinly sliced
1 lemon, thinly sliced
1 tsp salt
¾ tsp ground black pepper
1 red bell pepper, seeded, cut into thin strips
30 olives,such as Kalamata
additional chopped flat parsley

Method

1) in a bowl mix the olive oil the flat parsley, garlic, coriander, paprika, turmeric and the saffron, mix well and chill for few hours

Preheat the oven to 425° F Gas 7

1) in a buttered baking dish, lay in layer,half of the carrots, tomatoes, onion and lemon

2) drain the fish from the marinade, and reserve the marinade

3) add the fish on the top of the lemon layer, season with salt and pepper

4) top with the red pepper strips and the olives

5) pour the marinade over the fish, cover with foil and bake for 40 minutes, remove the foil and bake for another 15-20 minutes

Serve sprinkled with the additional parsley.
