Hi all, and buenos noches!
on a recent trip to aguascalientes Mexico, our group was invited to share in a meal and mariachi to thank us. it was a homestead that like more than some familys have, the 'kitchen' was also outside as the weather for the most part is very pleasant. besides the mariachi band, there was a large hand built stone grill that was used quite often and year~round.
while we all munched on pork rinds*similar, but different* that we used to scoop a wonderful common guacamole including tomatillos,cilantro,limejuice and the commons, the folk used poblano peppers that had been seeded and the tops cut off like a hat.so that it was a 'cup'. generous portions of beefwere sliced off a large cut and put to grill as were the poblanos. once the peppers were blackened, they were put into a paper bag to 'sweat' for easy skin removal. that done, we were handed some tortillas *handmade* and given a poblano which had a slice of grilled beef, and a slab of 'chihuahua' cheese inside. hold it in the tortilla, and enjoy! some mess, but it was sooo worth it! a good time with good simple food

Yes I have not only tried this recipe, but made it several times just 'showing it off' in the last 3 months lol.
