Thumbs up REC: Spicy Thai Tomato Soup

Hi All!

This recipe was buried in the Taste of Thai thread, but JKath suggested I post it here.

This is a quick, easy, Thai soup recipe I found on vegweb. It's not fancy, but it sure tastes good! All of the Thai flavors come together nicely for a casual and light starter.

My husband is a big cilantro fan, but he actually liked this soup quite a bit.

Spicy Thai Tomato Soup

1 can tomato soup (condensed Campbells)
1/2 soup can of lite coconut milk
1/2 soup can of water
1 tablespoon of chopped cilantro
1 teaspoon of (my beloved) green curry paste
1 squeeze of lime

Mix all together in saucepan. Heat & eat! The lite coconut milk gives it a nice velvety texture. Again, not fancy, but quick and light.
